WEBBS CHRISTMAS SPROUTS & BACON RECIPE

Serves 6

Ingredients

500g Brussel sprouts
140g toasted pecans
100g bacon (cut into lardons) 
Olive oil
Cracked black pepper


 

Method

1. Remove outer leaves from the sprouts and place in boiling, salted water. 

2. Cook sprouts for 5 to 8 minutes, then place in ice-cold water to maintain the green colour (this could be done the day before and stored in fridge overnight).

3. Chop pecans and toast in pan, remove and set aside. 

4. Cut bacon into lardons and fry in a pan with a little olive oil. 

5. Halve the sprouts, add to the bacon and fry until both start to crisp. 

6. Sprinkle pecans and serve.
