Droitwich Salt Cured Gammon Taco

Ingredients

For the gammon:

500g gammon
1tbsp oil
2 cloves of chopped garlic
2 tbsp sugar
2 tbsp water
2 finely chopped red chillies
2 tbsp fish sauce
2 tbsp dark soy sauce

For the salsa:

340g chopped pineapple
340g chopped cucumber
170g sliced red onion
170g white cabbage sliced
Chopped coriander
Squeeze of lime

To serve:

4 tbsp sour cream
6 tortilla wraps

Method

Method for gammon:

1. Heat oil in a pan and add the garlic and chilli.
2. Cook for 2-3 minutes.
3. Add shredded gammon and fish sauce.
4. Add sugared water, stirring constantly.
5. Caramelise and set aside.
 

Method for salsa:

1. Toss all the ingredients together.
2. Add chopped coriander and a squeeze of lime.
3. Arrange gammon in the tortilla wrap and add the salsa.
4. Garnish with coriander and lime, finish with the sour cream.
