WEBBS CHRISTMAS ROAST POTATO RECIPE
Serves 6
Ingredients
1.5kg Maris Piper potatoes
150g duck or goose fat, or 150ml olive oil
Salt
2 crushed garlic cloves (to taste)
Method
1. Preheat the oven to 200°C/3180°F/gas 6 and place a large roasting tin in the oven.
2. Peel the potatoes and cut into 4 even-sized pieces. Crush garlic cloves.
3. Drop the potatoes into a large pan and pour in enough water to barely cover them.
4. Add table salt and bring to the boil. When it starts to boil, reduce the heat and simmer the potatoes uncovered for 2 mins.
5. Put the duck or goose, or olive oil, into a hot roasting tin. Heat the oil in the oven for a few minutes so it’s hot.
6. Carefully put the potatoes into the hot fat, then turn and roll them so they are coated. Add crushed garlic cloves.
7. Spread potatoes in a single layer making sure each potato has enough room.
8. Roast the potatoes for 15 mins, then turn them over and roast for another 20-30 mins until golden and crisp. Sprinkle the salt 10 mins from the end and serve.
